Ingredients
- 1/4 cup olive oil
- 7 garlic cloves, diced
- 1 red onion, chopped
- 1 orange bell pepper, sliced
- 2 Italian spicy sausages, casings removed
- 1/2 cup red wine (or more)
- About 5 tablespoons sundried tomato pesto
- 1 bag spinach, slightly chopped
- 1/2 cup basil, chopped
- salt and pepper
- 1/4 cup cooking water
Directions
- Cook pasta according to manufacter's directions.
- Meanwhile, on med-low heat, heat olive oil in a large pan. Saute garlic and onion until tender.
- Increase heat to medium and add bell pepper and sausage to pan, making sure to break the meat apart with a wooden spoon. Add salt and pepper. Cook for 5 minutes.
- Add wine and tomato pesto and simmer for another 8 minutes.
- Stir in chopped spinach and basil to sauce and mix well.
- Mix pasta to sauce and add some reserved cooking water is pasta is too sticky.
- Serve with freshly grated parmesan cheese and a glass of wine!
