Cranberry Raisin Oatmeal Cookies



Finally, a good low-fat oatmeal cookie recipe. I have modified the original recipe by adding less oil, more yogurt, and some whole wheat flour. I must have tried at least ten different oatmeal cookie recipes before this one. The cookies were either too hard, or too soft, or simply not tasty enough.


Prep and cook time: 25 minutes
Makes 12 large cookies

Ingredients

  • 1/2 cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 to 3/4 cup brown sugar (depending how sweet you want your cookies to be)
  • 1/4 cup plain yogurt
  • 1 tablespoon oil (olive, canola,...)
  • 1 egg
  • 1 1/3 cup oats
  • 3/4 cup driend cranberries
  • 1/4 cup raisins
Directions
  1. Pre-heat oven to 350 degrees F. Place oven rack to highest part of oven so bottom of cookies don't burn!
  2. In a large bowl, mix together flour, baking powder, cinnamon, baking soda, salt, and sugar. Add yogurt, oil, egg, and mix well.
  3. Incorporate oats, cranberries, and raisins. 
  4. If cookie dough is too dry, add some yogurt.
  5. On a greased cookie sheet, add spoonfuls of dough and bake for about 12 minutes.
